Appropriately named after Lord Lamington of Queensland, Nate Moore of KO Pies demonstrates these delicious Australian cakes, which have earned their place as an iconic Aussie staple. Cubes of sponge cake are dipped in chocolate icing, then covered in shredded coconut. They'll have you shouting "G'day Mate!" before you know it.

Nate Moore is from a "po-dunk town in Connecticut," where he first learned the ways of the kitchen from his mother. With her encouragment, he later enrolled in a culinary program and pursued his passion. Currently, you can find him whipping up Australian goodies (meat pies, lamingtons and more!) at KO Pies in South Boston.
