Making your own sushi rice is easy when you know the necessary ingredients and steps. Make sure to allow 24 hours to create a vinegar, sugar, salt and seaweed mixture that's essential for a successful outcome. Jacky Poon of Fish Market Sushi Bar shares his recipe and once you master it yourself, you'll be ready to make his delicious Spicy Salmon Maki.
Originally from Hong Kong, Jacky Poon came to the United States at age 11. He and his best friend/business partner Kin Chan grew up together in Quincy, and followed each other through kitchens in various Boston eateries, training under sushi chefs and perfecting their craft. Jacky dreamed of opening his own place in order to be his own boss and to make up his own rules. Fish Market Sushi Bar opened in 2009, and is located in Allston, MA.
