Ellie enjoys making Jewish food with her family. We were lucky to find her.  Her ability to teach us about the different Jewish dishes she makes as well as enjoy some of her fine humor was great indeed.  She had an anicdote for almost anything that's always very funny. She doesn't claim to be a great cook, she just enjoys cooking.

Recipe

Ingredients

  • 2 large baking potatoes (the starchier the better)
  • 2 medium onions
  • 1 egg (lightly beaten)
  • salt & pepper to taste
  • Matzo meal (as needed if mixture is too wet)
  • olive oil for frying

How-to

  1. Use a food processor to make shoestring length potatoes
  2. Add onions and pulse
  3. Add 1 slightly beaten egg
  4. Add salt and pepper to taste
  5. Add Matzo meal as needed if mixture is too wet
  6. Combine all ingredients well
  7. Fry in olive oil over medium heat 3-5 minutes each side until golden and crispy
  8. Plate and serve with apple sauce, sour cream, or just as they are.  Delicious!
