- 2 large baking potatoes (the starchier the better)
- 2 medium onions
- 1 egg (lightly beaten)
- salt & pepper to taste
- Matzo meal (as needed if mixture is too wet)
- olive oil for frying
Latkes may look like a long, complicated process. However, it is really only three simple steps: shred, mix, and fry. The only complication is who's going to get the first potato pancake?
Ellie enjoys making Jewish food with her family. We were lucky to find her. Her ability to teach us about the different Jewish dishes she makes as well as enjoy some of her fine humor was great indeed. She had an anicdote for almost anything that's always very funny. She doesn't claim to be a great cook, she just enjoys cooking.

These were so good, crunchy on the outside and warm and soft on the inside! Breakfast, Dinner, Applesauce, sour cream, ketchup. All good, and so easy to make! (Dec 23, 2008 10:06:29 AM)
