Makes 10-12


  • 2 large baking potatoes
  • 2 medium onions
  • 1 egg, lightly beaten
  • salt to taste
  • pepper to taste
  • Matzo meal (as needed if mixture is too wet)
  • olive oil for frying


  1. Add potatoes to a food processor with shoestring blade attached and pulse
  2. Add onions and continue to pulse
  3. Transfer the onions and potatoes to a large bowl and add 1 slightly beaten egg
  4. Add salt and pepper to taste
  5. Add Matzo meal as needed if mixture is too wet
  6. Combine all ingredients well
  7. Fry in olive oil over medium heat 3-5 minutes each side until golden and crispy
  8. Plate and serve with apple sauce, sour cream, or just as they are
