
"Jesse G" shows you an easy weeknight meal that can be thrown into a slow cooker in the morning to be ready-to-eat after a long day's work. Eggplant and boneless chicken thighs are quickly sautéed, then added to a slow cooker with an aromatic braising liquid of broth, spices, lemon juice and tomato paste. Dried apricots and raisins lend subtle sweetness to this slowly stewed, filling Moroccan-style dish. Jesse prefers to serve it over quinoa, but this dish is complimented by any grain -- couscous, rice -- whatever is in the house!
Jesse Goldberg started cooking at a young age. He always looked forward to helping his mother prepare dinner when he was little, lending a hand with things such as chopping vegetables and stirring pots of bubbling soups. These simple tasks as a kid developed into a love of preparing food into Jesse's adulthood. When Jesse isn't working, he enjoys cooking with his wife Elizabeth in their East Boston kitchen.
