Red Velvet Cupcakes
Red Velvet Cupcakes
Red Velvet Cake made its comeback after an armadillo-shaped cameo in the movie "Steel Magnolias." Eunice Feller of Bread & Chocolate gives a modern twist on this retro classic, and describes her Red Velvet Cake as "a spiced white cake kissed with chocolate." Traditionally, this cake gets its moisture and tang from a dash of distilled vinegar and buttermilk. Eunice uses a good balsamic vinegar, and spices the cake with cinnamon. Cocoa powder and red food gel provide the glorious, deep red hue. Top with rich cream cheese frosting, dash with cinnamon and garnish with a toasted pecan halve. These cupcakes taste delectable, and are guaranteed more visually-appealing than a Red Velvet armadillo groom's cake!
