Makes 24 Cupcakes
- 1 cup stout (Guinness or other Irish full-bodied beer)
- 1 cup butter, room temperature
- ¾ cup unsweetened cocoa powder
- 2 cups flour
- 2 cups sugar
- 1½ tsp baking soda
- ¾ tsp salt
- 2 large eggs
- ⅔ cup sour cream
Ganache Filling
- 8 oz bittersweet chocolate
- ⅔ cup heavy cream
- 2 tbsp butter, room temperature
- 1-2 tbsp of Irish whiskey
Frosting
- 3-4 cups confectioners sugar
- 1 stick of butter, room temperature
- 4 oz (2 nips) of Bailey's Irish Cream or other Irish cream liqueur
