Recipe

Ingredients

Makes about 3 cups of icing

Royal Icing (Using Meringue Powder)

  • 4 cups  confectioners (powdered) sugar
  • 1/4 tsp cream of tartar
  • 3 tbsp meringue powder
  • 1/2 - 3/4 cup warm water

OR:

Royal Icing (Using Egg Whites)

  • 2 large egg whites
  • 2 tsp fresh lemon juice
  • 3 cups confectioners (powdered) sugar, sifted

How-to

Royal Icing (Using Meringue Powder)

  1. In the bowl of an electric mixer beat confectioners sugar and meringue powder until combined
  2. Add water and beat on medium to high until stiff peaks form (5-7 minutes) 

Royal Icing (Using Egg Whites)

  1. In the bowl of an electric mixer beat egg whites with the lemon juice
  2. Add sifted confectioners sugar
  3. Beat on low speed until combined and smooth

Note: Use icing right away or transfer to an air-tight container.  Keep covered with plastic wrap when not in use.  Royal icing hardens when exposed to air.  Keep covered with plastic wrap when not in use.
