What happens when you bake fresh pineapple chunks on low temperature for 3 hours? One-bite wonders that are sweet, chewy and a dynamite snack. Anthony Ricco of Spice Market restaurant in Manhattan shares this cool idea and suggests serving them solo, or with a pinch of salt and drizzle of lime juice. We agree with him that these creative and healthy fruit morsels would go great in a pineapple mojito.
Serving Suggestions: Enjoy as a snack, with a sprinkle or salt or lime juice, or muddle for a pineapple mojito cocktail
Born and raised in Brooklyn, Anthony Ricco knew he belonged in the kitchen as soon as he could hold a spatula. That was definitely an early sign of things to come. Inspired by his Italian grandmother's passion for cooking and his own drive to succeed, he ventured from construction work to his first culinary gig at China Grill Restaurant, and eventually found his way to celebrated Chef Jean-Georges Vongerichten’s Spice Market restaurant in Manhattan.
