Ingredients
Blondie Batter
- 3 cups cake flour
- 2 tsp baking powder
- 1 tsp salt
- 3 sticks unsalted butter
- 2 cups light brown sugar
- 4 eggs
- 2 tsp vanilla extract or vanilla bean paste
Strawberry Goat Cheese Filling
- 6 oz cream cheese
- 4 oz goat cheese
- ¼ cup sugar
- 1 egg
- 2 yolks
- 1 tsp vanilla extract
- 3 oz sour cream
- ½ cup strawberry jam
- a few dashes of pink food coloring (optional)
How-to
Prep Pan
- Pre-heat oven to 350º
- Spray a 9x13 pan with nonstick spray, lay in parchment paper and spray again with nonstick spray
Make Blondie Batter
- Cream butter and sugar
- Add eggs 2 at a time and mix. Add vanilla bean paste and mix. Scrape down bowl
- Mix in dry ingredients
Make Goat Cheese Mixture
- Cream goat cheese and cream cheese. Add sugar and mix
- Add eggs and extract and mix. Scrape down bowl
- Add sour cream and mix
- Add jam and food coloring and mix
Layer Blondie Batter & Goat Cheese Mixture
- Place about three quarters of the blondie batter in the pan
- Top with goat cheese batter and swirl in to blondie batter with a toothpick
- Top with remaining blondie batter
- Swirl together with a toothpick again
- Bake at 350º for 40-45 minutes. Rotate pan halfway through cooking process
- Let cool to room temperature and refrigerator for a couple hours before serving
