This week, we feature rising Chefs Schenker, Bettencourt, Ferraro and Bergamini who share signature recipes we know you'll find educational, inspiring and soul satisfying. Of course the prize for most unusual must go to Jesse Schenker of Recette. He shows you how to prepare a whole 5-lb octopus! We guarantee you will not be able to take your eyes off him as he tenderizes (clear the area!), marinates, bathes in aromatic olive oil and grills this tentacled wonder. Chef Bettencourt melts your heart with his fall-off-the-bone Braised Lamb Shanks. Chef Ferraro shares his father's super simple herbed Meatballs which show his full circle from comfort food upbringing to fine dining training back to his roots. Chef Bergamini is the epitome of the American dream having come to America about 6 years ago and worked his way up to Executive Chef of SD26 in Manhattan. What he hasn't forgotten are the simple things from his homeland like his hearty Pappa con Pomodoro.
Next Iron Chef contestant Mary Dumont steps up to the counter, too, to show that despite what you may have seen on TV, she CAN work magic with a pressure cooker and quite well, thank you very much.
