Turkey Soup w/ Root Vegetables

Serves 10-12

Ingredients

  • 2 tbsp olive oil
  • 2 cloves fresh garlic
  • 1 large Spanish onion, diced
  • 1 lb fennel, diced
  • 6 carrots, peeled & sliced
  • 2 parsnips, peeled & sliced
  • 1 turnip, peeled & diced
  • 2 sweet potatoes, peeled & sliced
  • 1 lb butternut squash, peeled & diced
  • 14 cups poultry stock
  • 2½ lbs cooked home-roasted turkey, shredded or diced
  • 2½ cups cooked rice
  • 3 tbsp chopped fresh parsley
  • kosher salt & freshly ground black pepper to taste

How-to

  1. In a large heavy lined stockpot add the olive oil and place on medium-high heat
  2. Add all of the vegetables and garlic
  3. Saute this combination of vegetables for 5-7 minutes
  4. Pour the poultry stock over the vegetables and bring to a boil
  5. Turn down the heat slightly and simmer until vegetables are almost tender, 15-20 minutes
  6. Add the turkey meat & half of the rice and cook 2-3 minutes
  7. Add remainder of the rice and fresh parsley
  8. Season with kosher salt and freshly ground black pepper
