Watermelon & Goat Cheese Salad


  • watermelon, cubed
  • red onion, sliced thin
  • kalamata olives, halved
  • crumbled goat cheese
  • jalapeno peppers, diced
  • fresh cilantro, torn
  • fresh sorrel, torn
  • cherry tomatoes, halved
  • salt
  • pepper
  • ¼ cup sherry vinegar
  • ¼ cup extra virgin olive oil


  1. Combine sherry vinegar and extra virgin olive oil in a squeeze bottle and set aside (best if refrigerated)
  2. In a large bowl, add watermelon, onion, olives, cherry tomatoes, goat cheese and jalapeno peppers
  3. Tear pieces of cilantro and sorrel and add to the bowl.  Toss gently
  4. Give the bottle of sherry vinegar & olive a shake to emulsify ingredients and drizzle over salad
  5. Arrange salad on a plate and drizzle juices from mixing bowl over salad. Garnish with fresh cilantro
