Sautéed Kale w/ Apples

Serves 3

Ingredients

  • 1–2 tbsp olive oil
  • 1 onion, thinly sliced
  • 1 large, tart apple, sliced
  • 3 garlic cloves, minced
  • ¼ cup raisins
  • 1½ bunches kale, thinly siced
  • ¾ cup water
  • 1½ tbsp balsamic vinegar
  • ½ tsp smoked paprika
  • ½ cup toasted walnuts, chopped
  • salt
  • 2–3 tablespoons crumbled feta

How-to

  1. Heat the olive oil in a wide, heavy-bottomed saucepan over medium-high
  2. Add the onions, reduce heat to medium and cook 10 minutes
  3. Reduce the heat to low and add the sliced apple
  4. Add the garlic, raisins, kale and water. Cook for 5-10 minutes or until kale is tender, stirring frequently
  5. Add the vinegar and cook until it has evaporated
  6. Add the walnuts (to toast, bake in a 350º oven for 7-8 minutes until golden), feta and smoked paprika, stirring well. Season with salt to taste
