Cauliflotatoes
Serves 4
Ingredients
- 2-3 potatoes, skins on, chopped
 - ½ head cauliflower, cored & chopped
 - 1 medium onion, diced
 - ¼ cup sour cream
 - 3 tbsp milk
 - 1 tbsp butter
 - salt & pepper to taste
 - ¼ cup scallions, whites & greens, chopped
 
How-to
- Add onion, potatoes and cauliflower to large pot of boiling water and cook until fork tender, 15-20 minutes
 - Strain water and to the potatoes add butter, sour cream, milk, salt and pepper
 - Mash until desired consistency is reached, then add scallions and with a spoon, stir to incorporate (do not mash in the scallions)
