Israeli Couscous w/ African Basil & Feta

Serves 6 as a side dish


  • 2 cups Israeli or Maftoul couscous
  • ¼ cup African basil leaves & flowers, chopped
  • ¼ cup chervil, chopped
  • 1 small bunch claytonia, chopped
  • ¼ cup chives, chopped
  • 2 small carrots, chopped
  • 3 tbsp olive oil
  • juice of ½ lemon, or to taste
  • salt & pepper for seasoning
  • 2 small carrots, chopped
  • ¼ cup feta cheese, crumbled


  1. Bring a pot of salted water to a boil.  Add the couscous.  Cook for 8-10 minutes, then drain and rinse with cold water.  Add a little olive oil so that the couscous doesn't stick to the pot
  2. Transfer couscous to a large bowl.  Add the remaining ingredients.  Season with salt and pepper to taste and serve immediately
