Israeli Couscous w/ African Basil & Feta
Serves 6 as a side dish
Ingredients
- 2 cups Israeli or Maftoul couscous
 - ¼ cup African basil leaves & flowers, chopped
 - ¼ cup chervil, chopped
 - 1 small bunch claytonia, chopped
 - ¼ cup chives, chopped
 - 2 small carrots, chopped
 - 3 tbsp olive oil
 - juice of ½ lemon, or to taste
 - salt & pepper for seasoning
 - 2 small carrots, chopped
 - ¼ cup feta cheese, crumbled
 
How-to
- Bring a pot of salted water to a boil. Add the couscous. Cook for 8-10 minutes, then drain and rinse with cold water. Add a little olive oil so that the couscous doesn't stick to the pot
 - Transfer couscous to a large bowl. Add the remaining ingredients. Season with salt and pepper to taste and serve immediately
