General Gau's Chicken

Serves 2

Ingredients

  • 1 lb chicken thigh or breast, cut into chunks
  • 1 bunch broccoli
  • 1 tsp salt
  • 2½ tsp cornstarch
  • 1 tsp vegetable oil
  • 3 tsp white vinegar
  • ½ tsp ginger powder
  • ½ tsp white pepper powder
  • 3 tsp sugar
  • ½ cup water
  • scallions for garnish

General Gau's Sauce

  • 2½ tsp sugar
  • 2 tsp cornstarch
  • ½ tsp salt
  • 2½-3 tsp white vinegar
  • ½ tsp oyster sauce
  • ½ tsp crushed garlic
  • ½ tsp sesame oil
  • ⅓ tsp dark soy sauce
  • ½ cup water
  • 1 tsp chili powder
  • scallions for garnish

How-to

  1. Mix chicken, salt, oil, vinegar, spices and sugar and allow to marinate for 1-2 minutes
  2. Coat chicken with cornstarch
  3. Heat oil to 350º and slowly add chicken piece by piece to deep fryer
  4. Cook 5-10 minutes
  5. Set aside to drain
  6. Heat water in a wok and add broccoli, cook until bright green then remove and set aside

Prepare General Gau Sauce & Add Chicken

  1. In a pre-heated pan or wok, add vegetable oil, sauce ingredients and turn up heat. If sauce is too thick add more general gau's sauce
  2. Add chicken and toss together
  3. Plate broccoli and chicken and garnish with chopped scallions & serve
