Ahi Tuna Burger
Makes 2-3 Burgers
Ingredients
For Burger
- 12-16 oz Ahi tuna
 - 1 jalapeƱo, chopped
 - 1 head garlic
 - olive oil
 - 1 egg
 - 1 tbsp wasabi paste
 - 1 tbsp soy sauce
 - 1 tbsp rice wine vinegar
 - kosher salt
 - 2 tbsp canola oil
 - 1 tbsp hot sesame oil
 
For Bun & Toppings
- hamburger buns
 - crispy prosciutto
 - arugula
 - tomato slices
 
How-to
Roast Garlic
- Preheat oven to 350º
 - Slice a head of garlic in half, across the length
 - Brush with olive oil, wrap in foil and roast 45 minutes
 - Squeeze roasted garlic from the head and mash the cloves into a paste
 
Make Tuna Patties, Cook & Assemble
- Chop tuna into fine pieces, or slice into 2" cubes and pulse in food processor 8-10 times
 - Transfer to a bowl and add soy sauce, roasted garlic paste, wasabi paste, jalapeño, rice wine vinegar and the egg. Mix to combine
 - Meanwhile, preheat a large saute pan over medium heat
 - Shape tuna mixture into 2-3 burgers
 - Add canola oil and hot sesame oil to the pan. Add the burgers and cook 60-90 seconds per side for medium-rare
 - Assemble burger on a a hamburger bun and top with arugula, crisped prosciutto and tomato
