Spaghetti Squash & Sauce

Serves 2


  • 1 large spaghetti squash
  • spaghetti sauce
  • grated Parmesan cheese

Special Equipment

  • long metal skewer


  1. Preheat oven to 375º
  2. With a long skewer, poke small holes all around the squash and place squash in a shallow baking pan
  3. Bake for 1 hour, turning squash at 30 minutes to cook evenly
  4. Slice in half lengthwise.  Remove seeds and fibrous strings and discard (quash will be very hot, so use gloves or wait until it cools)
  5. Drag a fork across the squash to scrape out all the "spaghetti" flesh down to the skin
  6. Serve with heated spaghetti sauce of your choice and top with grated cheese. You'll think you're eating a delicious pasta meal!
