Jerk Chicken

Serves 5


  • 5 lb chicken
  • ¼ cup Lawry's Seasoning or chicken/all-purpose seasoning
  • ¼ cup garlic powder
  • 1 cup Jamaican jerk sauce
  • ¼ cup sherry cooking wine
  • 1 tsp browning or caramel food color


  1. Preheat oven to 350º
  2. In a bowl place chicken, all-purpose seasoning, garlic powder, Jamaican jerk sauce, sherry wine and browning (food coloring)
  3. Rub ingredients into the chicken
  4. Coat a pan with cooking spray and lay the chicken on the pan and roast for 45 minutes
