Honeymoon Roast

Serves 2


  • 20 oz Honeymoon Roast (also known as Sirloin Cap or Coulotte)
  • salt to taste
  • freshly ground black pepper to taste
  • olive oil for coating the pan
  • 2 tbsp butter


  1. Preheat oven to 350º
  2. Season both sides of roast well with salt and pepper
  3. Coat a hot skillet with olive oil and sear roast about 2 minutes on one side, adding about  2 tbsp butter during searing and basting with the oil and butter
  4. Flip it and roast in the oven at 350º for 15-17 minutes.
  5. Let rest 6-7 minutes before serving
  6. Roast is done when meat thermometer reaches 125-128º
