Gourmet Family Meal
Ingredients
- 2 large boneless chicken breasts
 
Marinade
- ½ cup hoisin sauce
 - 1½ cups low-fat Italian dressing
 - 3 tbsp ketchup
 - 1 tbsp soy sauce
 - 2 tbsp minced garlic
 - 3 tbsp wine (Chardonnay or rice wine vinegar)
 
Couscous
- 1 pkg couscous
 - raisins
 - pine nuts
 - goat cheese (optional)
 - sun-dried tomatoes
 
Sautéed Spinach
- 1 bag pre-washed spinach
 - flavored olive oil
 - garlic
 - sun-dried tomatoes
 - raisins
 - juice of ½ lemon
 - crumbled goat cheese
 
How-to
Prepare the Marinade
- Combine hoisin sauce (Tip -- tell the kids it's barbecue sauce - they'll love it!), Italian dressing, ketchup, soy sauce, garlic and wine
 - Stir all ingredients
 - Place chicken in bowl
 - Marinate if possible for a few hours in a ziplock bag or overnight in refrigerator
 
Make the Barbecue Chicken
- Rinse and pat dry 2 large boneless chicken breasts
 - Cut each breast in half
 - Preheat oven to 350 degrees
 - Remove chicken from marinade and place in baking dish
 - Pour extra marinade on top
 - Bake for 25 minutes or until done inside, then broil for a few minutes at the end to make it crispy
 
Prepare the Couscous
- Make couscous according to package directions
 - When done, add favorite ingredients (yellow or brown raisins, pine nuts that have been toasted at 350 degrees for 3-4 minutes, sun-dried tomatoes)
 
Sauté the Spinach
- Use a pan large enough to hold one bag of pre-washed spinach (a wok is recommended)
 - Add flavored olive oil
 - Add 1 tsp of minced garlic and handful of sun-dried tomatoes
 - When garlic starts to sizzle, add spinach
 - Drizzle olive oil for extra flavor as spinach cooks
 - Add optional ingredients (raisins, sun-dried tomatoes)
 - Add juice of 1/2 fresh lemon
 - Stir in crumbled cheese of your choice (Denise recommends goat cheese)
 - Cook until spinach is wilted
 
Finish the Gourmet Family Meal
- Assemble barbecue chicken, couscous and spinach
 - Add cilantro on top of chicken before serving
