Curried Goat Stew

Serves 4

Ingredients

  • 6 tbsp vegetable oil, divided
  • 2 lbs fresh or frozen (thawed) goat meat, cut into 1" cubes
  • 2 onions, diced
  • 3 garlic cloves, minced
  • 2 tsp sweet curry powder
  • 2 tsp hot curry powder
  • 2 bay leaves
  • 1 tbsp fresh thyme leaves
  • ΒΌ cup coconut milk
  • 2 cups beef stock
  • 1 tbsp white wine vinegar
  • salt & pepper for seasoning

How-to

  1. Season goat with salt and pepper
  2. Heat 3 tbsp of oil in a large pot
  3. Sear goat in batches until nicely browned
  4. Remove goat and set aside. In same pot as you seared the goat, add remaining oil and onions. Sauté onions for 10-15 minutes
  5. Stir in garlic and curry powders. Cook for 2-3 minutes
  6. Return goat to the pot and add bay leaves, thyme, stock, coconut milk and vinegar. Season with salt and pepper
  7. Simmer for 60 minutes, or until goat is tender
  8. Serve atop cooked rice
