Beef Rollatini


  • 2 lb flank steak, pounded
  • butter, enough to spread on slices of flank steak
  • ½ cup Italian style bread crumbs
  • 1 cup grated Parmesan cheese
  • salt & pepper to taste
  • ¼" olive oil


Prep Steak

  1. Place steak between two pieces of parchment paper and pound with mallet until thin
  2. Sprinkle with salt & paper and slice pounded steak into 1½" wide strips
  3. Generously coat steak strips with room temperature butter

Roll, Fry & Serve

  1. In a bowl mix Italian style breadcrumbs with Parmesan cheese
  2. Spoon breadcrumb-cheese mixture onto steak
  3. Roll strips and secure with toothpick 
  4. Coat bottom of frying pan with ¼" olive oil and heat
  5. Place rolls in frying pan and cook for 5-8 minutes or until meat is cooked
