Jean's Mini Cheesecakes

Makes 12 mini-cheesecakes - the recipe can be doubled

Ingredients

  • 12 vanilla wafers
  • two 8 oz packages cream cheese, softened
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • cherry pie filling (or use fruit, nuts - any flavorings of choice)

Special Equipment

  • muffin/cupcake tin
  • muffin tin liners
  • hand mixer

How-to

  1. Preheat oven to 325º
  2. Line muffin tin with foil liners
  3. Place one vanilla wafer in each liner
  4. Mix cream cheese and sugar with a spoon to combine. Add vanilla extract and mix on medium speed, about 2 minutes
  5. Add eggs, one at a time, and mix until there are no lumps
  6. Pour over wafers, filling ¾ full. Cheesecakes will puff up while baking, so do not fill to the top of the liner
  7. Bake for 25 minutes. Cheesecakes will look almost like muffins, but the top will lower and in fact, will form a little indentation which is perfect for filling
  8. Let cool in the muffin tins, then remove from pan and chill for a few hours
  9. Top with fruit, preserves, nuts or chocolate. Be creative! Keep chilled until ready to serve
