Grapefruit Granita
Makes 5 Cups
Ingredients
For Mint Simple Syrup
- 1 cup sugar
 - 1 cup water
 - handful of mint leaves
 
For Granita
- 1 cup Mint Simple Syrup (see above)
 - 4 cups grapefruit juice
 - tequila for serving (optional)
 
How-to
Make Mint Simple Syrup
- Bring sugar & water together in a small pot. Bring to boil, then add mint leaves and remove from heat
 - Let steep at room temperature, 30 minutes
 - Strain mint leaves and cool completely
 
Mix & Freeze
- Whisk together 1 cup mint simple syrup with 4 cups grapefruit juice
 - Pour into a shallow pan and freeze for 1-3 hours, until firm, fluffing with a fork every 30 minutes
 
Serving Suggestions
- Chip off a chunk of the granita (it will freeze fairly solid) and pulse in a food processor a few times to achieve a shaved ice texture
 - Scoop into a bowl and serve immediately
 - If desired, drizzle tequila over the granita tableside
