  • 2¼ cups all-purpose flour
  • 2¼ tsp baking powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp sugar
  • 1½ tbsp fresh thyme
  • 2 sticks unsalted butter, cubed & chilled
  • ½ cup + 1 tbsp buttermilk
  • all-purpose flour (for dusting)
  • buttermilk for brushing

How-to

  1. Preheat oven to 350°
  2. In a large bowl or mixer, combine flour, baking powder, salt, pepper, sugar and thyme
  3. Add butter and mix until irregular-sized pieces are formed, about 5 minutes (use paddle attachment if using a stand mixer)
  4. Add in buttermilk slowly and mix
  5. Turn the dough out onto a lightly-floured surface.Finish mixing on table by folding excess flour into dough, kneading only a few times (as little as possible to avoid a tough dough)
  6. Pat out into flat round, about ¼" - ½" in thickness. Cut into wedges, or cut rounds with a biscuit cutter
  7. Place on a parchment-lined sheet pan and let rest for 30 minutes
  8. Brush with buttermilk and bake 15 minutes or until lightly golden brown
