Black Pepper & Thyme Scones
Makes 9 scones
Ingredients
- 2¼ cups all-purpose flour
- 2¼ tsp baking powder
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp sugar
- 1½ tbsp fresh thyme
- 2 sticks unsalted butter, cubed & chilled
- ½ cup + 1 tbsp buttermilk
- all-purpose flour (for dusting)
- buttermilk for brushing
How-to
- Preheat oven to 350°
- In a large bowl or mixer, combine flour, baking powder, salt, pepper, sugar and thyme
- Add butter and mix until irregular-sized pieces are formed, about 5 minutes (use paddle attachment if using a stand mixer)
- Add in buttermilk slowly and mix
- Turn the dough out onto a lightly-floured surface.Finish mixing on table by folding excess flour into dough, kneading only a few times (as little as possible to avoid a tough dough)
- Pat out into flat round, about ¼" - ½" in thickness. Cut into wedges, or cut rounds with a biscuit cutter
- Place on a parchment-lined sheet pan and let rest for 30 minutes
- Brush with buttermilk and bake 15 minutes or until lightly golden brown
