Apple-Miso Sorbet


Simple Syrup*

  • 2 cups sugar
  • 2 cups water

Additional Ingredients

  • 8 unpeeled Fuji apples, chopped
  • 3 tbsp white miso paste
  • 2 cups simple syrup*
  • ½ cup water

Garnish Suggestions

  • dehydrated apple slices
  • crushed peanut brittle


  • blender
  • fine mesh strainer/chinois
  • ice cream maker


Make Simple Syrup

  1. Mix equal parts sugar and water. Heat until all the sugar has dissolved
  2. Let cool before use

Make Sorbet

  1. In blender, purée apples with miso paste and simple syrup.  Add water, if needed, to make a smooth purée
  2. Strain mixture, then chill and freeze in ice cream machine according to manufacturer's directions

Serving Suggestion - Serve with dehydrated apple slices and crushed peanut brittle
