Whole Grain Waffles

Serves 6-8


  • 2 cups whole or skim milk (or soy milk)
  • 2 eggs
  • 2 tbsp maple syrup or honey
  • 2 tbsp peanut, walnut or canola oil
  • 1 cup white whole wheat flour
  • 1 cup oat flour
  • ½ cup pecan or almond meal (or other nut meal)
  • 1 tsp baking powder
  • 1 tsp salt

  • waffle iron


  1. Preheat waffle iron according to manufacturer's instructions
  2. Whisk together the wet ingredients in a medium-sized bowl. Combine dry ingredients, then stir into wet until no big clumps remain. [The low-gluten oat flour means you don't have to worry about overmixing]
  3. Pour batter into waffle iron, close lid and cook according to your waffle iron manufacturer's instructions
  4. Serve with butter, nuts, maple syrup and/or fruit
