Fruitcake Brandy Infusion
Ingredients
- 2½ lb fruit cake (sliced & toasted)
 - 5 liters Fundador Brandy (or brandy of your choice)
 
Special Equipment
- large jar (Eben uses an apothecary jar)
 - chinois, strainer or seive
 - cheesecloth
 
How-to
- Pour 5 liters of brandy in a large jar
 - Cut a fruitcake into small pieces and toast until brown
 - Immerse fruitcake pieces into the jar and let sit for 36 hrs, agitating every 12 hrs
 - Strain brandy, remove solids and return brandy to jar
 - Serve as is or in Eben's signature cocktail, Fruitcake Flip
