Bubble Tea


  • ¼ cup large quick-cooking tapioca pearls
  • 1¾ cups water
  • 1¾ oz simple syrup (sugar dissolved in equal amount of water)
  • prepared black tea
  • 1½ oz half & half

Special Equipment

  • cocktail shaker
  • bubble tea fat straws


  1. Make a pot of regular black tea and set aside to cool
  2. In the meantime, bring a saucepan of 1¾ cups of water to a boil
  3. Add ¼ cup tapioca pearls. Stir gently so tapioca doesn't stick to the bottom of the pan
  4. Boil for 5 minutes, then strain. The tapioca will increase in size and become soft
  5. Lightly coat the tapioca pearls with simple syrup and gently mix
  6. Fill a glass ⅔ full with prepared tea. Add half & half and stir
  7. Add 1¾ oz simple syrup (or to taste)
  8. Add 2 tbsp of cooked tapioca pearls per serving
  9. Add ice and pour tea mixture into a cocktail shaker. Shake well and pour into a glass
  10. Serve with a bubble tea fat straw
