Blackberry Sparkler

Makes 1 cocktail (syrup yields 3 cups & lasts 2 weeks - plenty to try in your own creative cocktails!)

Ingredients

For the Blackberry Syrup*

  • 2 pints (about 3 cups) blackberries
  • 3 cups sugar
  • 3 cups water
  • 2 drops vanilla extract (optional)

For the Cocktail

  • 2 oz of the Blackberry Syrup*
  • 4 oz Prosecco sparkling wine (ginger ale or club soda)
  • squeeze of fresh lemon

Garnish Suggestions

  • whole blackberry
  • lemon twist

Equipment

  • mesh strainer
  • squeeze bottle
  • 8 oz champagne flute

How-to

Make Blackberry Syrup - makes 3 cups

  1. Place berries, sugar and water in a saucepan and stir to mix. Add vanilla extract (optional)
  2. Place on stovetop and bring to a boil, then reduce heat to medium and simmer 15-20 minutes (mixture does not thicken)
  3. Remove from heat and let cool
  4. Strain into a jar or squeeze bottle that has a cap to cover when not in use (syrup is good for 2 weeks)

Make Cocktail

  1. Add 1 oz of blackberry syrup to a champagne flute
  2. Slowly top with Prosecco sparkling wine (or ginger ale). (Sparkling wines or ginger ale will fizz up quickly, so do add slowly!)
  3. Add a squeeze of lemon juice and garnish with a whole blackberry
