Tyropitakia (Cheese Triangles)

Ingredients

  • 2 eggs and 1 egg yolk
  • ¼ cup heavy cream
  • 1 lb of feta cheese (crumbled)
  • pepper to taste
  • 1 lb phyllo dough
  • 2 sticks of butter (melted)
  • sesame seeds

Preparation

Preheat oven to 400 degrees

Make the Filling

  1. In a small bowl, add eggs and cream and stir
  2. Add feta and mix until the feta is covered and the consistency is thick
  3. Add pepper

Prepare the Phyllo Dough

  1. Lay out the phyllo dough on a flat surface
  2. Score the dough into 4 rows/strips
  3. Cut the rows.  Keep the phyllo dough moist while working by covering with a piece of wax paper and then a damp kitchen towel

Fill and Fold the Triangles

  1. Place a strip of phyllo dough onto a flat surface and brush with melted butter
  2. Add another strip of phyllo dough on top and brush with melted butter
  3. Add 1 tsp of the filling on the corner edge of the strip
  4. Begin to fold over the phyllo, along with the filling, from corner to corner in a triangular shape; do this until the whole strip is folded.

Bake the Tyropitakia

  1. Put egg yolk in a bowl and whisk
  2. Brush the egg on the folded triangle
  3. Sprinkle sesame seeds over the cheese Tyropitakia
  4. Bake15-20 minutes or until golden brown
