Tuscan White Bean Spread w/ Truffle Oil


  • 1 (16-oz) can white beans (cannellini beans used in this recipe)
  • 1 tbsp fresh lemon juice
  • ½ - 1 tsp sea salt
  • 1 garlic clove, chopped
  • 1 tbsp chopped fresh rosemary (thyme or mint)
  • 2 tbsp olive oil
  • 1-2 tbsp water as needed for desired texture
  • drizzle of white truffle oil

  • food processor


  1. Rinse and drain the canned beans
  2. Combine beans, oil, thyme or rosemary, lemon juice and garlic in a food processor
  3. Purée until smooth yet still with some texture. Add water if too thick
  4. When it has reached the desired texture, transfer the bean purée to a small bowl
  5. Taste and season as desired
  6. Drizzle with truffle oil
  7. Serve with grilled focaccia or Italian bread, pita chips, crostini and marinated olives
