Mussels Kaiyaki

Serves 10-15

Ingredients

  • ½ lb of crab meat
  • 2 lbs (about 30-40) frozen New Zealand green muscles or local large mussels, steamed
  • 8 oz shiitake mushroom
  • 8 oz enoki mushroom, (but it can be any mushroom)
  • 1-2 oz flying fish roe
  • 10 tbsp Japanese Mayo
  • 1 bunch minced scallions

How-to

  1. Chop mushrooms, steamed and shelled mussles, and crab meat into small cubes
  2. Shred the crab meat and mix with mushrooms, mussels, flying fish roe, scallions and Japanese mayo
  3. Scoop onto clean mussel shells
  4. Bake at 350° 7-10 minutes until tops are brown
