Homemade Potato Chips

Makes 6 Cups


  • 2 Idaho potatoes, thinly sliced
  • canola oil (enough to fill a pot at least 4" deep)
  • kosher salt to taste


  1. Fill a heavy-bottomed pot with canola oil, at least 4" deep. Heat to 350º
  2. Slice potatoes to desired thickness (about ¹⁄₈" thick is best) with a mandolin or food processor fitted with a slicing blade
  3. Fry until golden brown, about 5 minutes 
  4. Remove to a paper towel-lined plate to absorb excess oil. Season with salt immediately while hot
