Crushed & Loaded Potatoes


For Spice Mix

  • 1 tbsp cumin
  • 1 tbsp ancho chile powder
  • 1 tbsp cayenne pepper
  • salt & pepper

For Garlic Butter

  • 1 stick butter
  • 1 tbsp minced garlic
  • crushed red pepper (to taste)
  • 1 tbsp chopped cilantro

Potatoes & Suggested Toppings

  • red bliss potatoes
  • chopped red onion
  • diced tomato
  • shredded cheese (Chihuahua & Monteray Jack blend suggested)
  • hot sauce
  • sour cream


Make Spice Rub

  1. Mix all ingredients together in a small bowl. Set aside

Make Garlic Butter

  1. Melt butter in small saucepan over medium heat
  2. Add garlic, red pepper flakes and cilantro
  3. Remove from heat and set aside

Boil Potatoes, Crush & Load

  1. Bring a large pot of salted water to boil
  2. Add potatoes (skin-on), and boil until fork-tender, about 8-10 minutes
  3. Preheat oven to broil
  4. Remove from water and allow to cool slightly (to the touch)
  5. Score each potato on the top. Using a clean kitchen towel, press down on the potato, crushing with the palm of your hand until slightly flattened
  6. Place on sheet tray, brush with garlic butter and sprinkle with spice rub
  7. Broil 10-12 minutes, or until golden and crusty on top
  8. Add chopped red onion, tomato and cheese. Broil 3-5 minutes, or until cheese melts
  9. Top with hot sauce and sour cream if desired. Serve immediately
