Bacon Stuffed Mushrooms


  • 18-20 cremini mushrooms
  • 8 bacon slices, finely chopped (reserve bacon fat after cooking)
  • 2 tsp butter
  • 3 scallions, minced
  • ½ red bell pepper, minced
  • 1 garlic clove, minced
  • 1 cup sour cream
  • ¼ tsp Worcestershire sauce
  • salt to taste
  • pepper to taste


  1. Preheat oven to 350º
  2. Wipe mushrooms w/ a damp cloth, remove stems and chop them finely
  3. Cook bacon in a skillet until browned and drain on paper towels. Leave about a tablespoon of bacon grease in pan, add butter and let melt
  4. Add the chopped mushroom stems, scallions, bell pepper, and garlic, stir until softened (roughly 5 minutes) transfer to mixing bowl and add remaining ingredients (sour cream, Worcestershire, salt, pepper) and mix
  5. Stuff the mushrooms with the mixture and bake until browned, about  20 minutes
