Barbecued ribs are treated royally here with a rub, then smoked, baked and grilled. This is fall-off-the-bone, dripping down your arms, good stuff. You've seen rubs, you've tasted rubs, you've made rubs. You have not seen, tasted or made them all until you tackle this one. For a finishing touch, don't forget Eric's BBQ Sauce. Eric is the BBQ pit-master at Formaggio Kitchen in Cambridge, MA, where he found a way to convert an alleyway into barbecue central. Formaggio is known as a high-end cheese shop, so Eric makes sure customers know that "Barbecue is supposed to be rustic. It's supposed to be dirty. You're supposed to end up filthy from eating it." So true, Eric. So true. When not grilling up a feast, he lives his other life in music, playing with a band. Can't beat that combination of skills - food and music.
