Entrees Arepas

Arepas

Join Carla and her Mom, Anamelia as they share their family recipe for Arepas, a cornmeal-based bread that is traditionally stuffed with cheese. This version is stuffed with cheese and black beans. As Carla would say, "Riquisimas!!" (That means very, very, very delicious.)

About Carla & Anamelia Arriaga

Carla and Anamelia are THE warmest and most delightful mother and daughter you will ever meet. Originally from Venezuela, Carla came to America to go to college for graphic design and never left. She now lives in Portland, Oregon, with her great husband Eugene. Anamelia and her husband Raul had a Venezuelan restaurant for several years in their homeland. Despite trying times in Venezuela, Anamelia still lives there with her husband where they now run a tea business called Camelia Casa de Te, which offers high quality loose teas, tea education to restaurants, and tea parties (how fun!). Both Carla and Anamelia are amazing cooks and we thank them for being kind enough to share their wonderful recipes with us. Everyone must make the Arepas!!!

Recipe

Ingredients

Serves 6

  • 1 tsp salt
  • 2 1/2 cups water
  • 2 cups P.A.N. pre-cooked white cornmeal OR Goya Masarepa Blanca

How-to

Preheat oven to 350º

  1. Dissolve salt and water in a bowl
  2. Add the cormeal and mix until the dough separates from the bowl
  3. Cover with a towel and let rest about 10 minutes
  4. Roughly divide dough into 6 portions.  Take one portion and start making a ball between your hands. After it is nice and smooth, start flattening the ball, moving it from one hand to the other, making sure it remains round. The shape should be like an English muffin (but bigger and fatter). Make the rest of the arepas and place them on a plate
  5. Heat a non-stick or castiron pan at medium-high heat. Slightly oil the pan (just to make sure arepas wont stick). Place arepas on the pan and cook for about 4-5 minutes Make sure you don't try flipping them before this time - they will stick to the pan and fall apart
  6. After 4-5 minutes, flip and let cook another 4-5 minutes. Make sure you keep an eye on them
  7. Place arepas in middle rack of the oven and bake for about 7-10 minutes, flip, then bake another 7-10 minutes. You'll notice they start to puff up and when you tap them they make a "hollow" sound. The best way to do this is to place a towel in one of your hands,  place an arepa and then tap it with your other hand as though you're clapping
  8. Slice and stuff with cheese and black beans (as pictured) or the fillings of your choice
  9. Enjoy!!

i want to make these - but i was thinking - are they good if you add a few extra spices to the dough? Maybe like garlic or rosemary? what do you think? (Jul 16, 2008 12:35:38 PM)
