Unfortunately, much of New Orleans cuisine (the real cuisine- not what you find in restaurants- not to knock the restaurants)is endangered. It was a process that began before Katrina, but I;m afraid will be greatly accelerated by the diaspora post Katrina.

I invite you to visit my blog ( http://painperdu.blogstream.com) and read about my time spent in NOLA the first two Carnival seasons after Katrina. I will truly thank you for it ;-)

You guys nailed it. Its true, we love having people come down and visit with us. Sharing our food and music brings us a lot of pride. The city is as alive ever. So, do come down and visit- in the meantime I'll be trying Poppy's Calas. Thanks Ya'll!

These people are fascinating and obviously passionate about food and New Orleans. I had crawfish years ago in Dallas but it never looked as good as it does in Boo's video. Thanks for bringing these stories to us. They show not just recipes and how-to, but the energy and charisma alive and well in New Orleans.

These videos are amazing - I didn't want to miss a word of what they were saying, so I watched and watched again. Amazing people who seem to absolutely love what the do.
